The bad news is that maple syrup is definitely being affected by climate change. The good news is that producers and scientists are innovating and making more maple syrup than ever. In this episode of Before It’s Gone, I talk to Dr. Lisa Chase, a University of Vermont researcher about how maple producers are adapting to and dealing with climate change. It actually a really inspiring story, which makes me feel confident that I’ll be able to enjoy real maple on my waffles no matter how the climate changes.
